Vegan Carrot Cake:
1 medium ripe banana ( frozen then thawed slightly)
2/3 cup of raw sugar or maple syrup
3/4 cup of oil
1 1/2 cups of grated carrot or carrot pulp from juicing
1 1/4 cups gluten free flour
1 tbsp of baking powder
1/2 tsp sea salt
1 tsp ground cinnamon
1/2 tsp of ground nutmeg
1/2 cup of raisins
1/2 cup of walnuts
Mix all together grease and coat a loaf pan bake at 350 degrees for an hour.
